Most smoked salmon is hurried. Ours is not. The fish is cured by hand, then drawn through two woods, one cold, one warm, until the flavour is layered the way a good record is.
A dry rub of Pacific sea salt, demerara, and bay. Seventy-two hours, undisturbed. The flesh tightens; the colour deepens to garnet.
Alder gives a quiet, almost floral smoke. Twenty hours below 28°C, long enough for the wood to enter the fish without ever cooking it.
Cherry is sweeter, redder, more present. A short, hot finish that lacquers the surface and sets the second flavour against the first.
Our salmon is hand-line caught in the cold, mineral water between Haida Gwaii and the mainland, the same channels first-nations smokehouses have worked for generations. We buy small. We buy from skippers we know. The fish is on ice within minutes and in our cure room within a day.
